Classic French bakeries do things the way they’ve been done for hundreds of years: with recipes and artisan skills handed down from generations. Rollers Bakehouse founder James Sideris prefers to do things his own way.
With a love for 90s hip hop, Palm Springs design and American ability to do simple concepts well, James opened Rollers in Manly in 2018.
Buried down a back lane in a shop-front inspired by modernist Californian architecture, Rollers combines classic French pastry techniques with supercharged, complex flavour profiles.
